Songhelou Restaurant, founded in 1737, is the most renowned restaurant in Suzhou. In the beginning it was a noodle shop famous for spiced duck noodle and chicken noodle.

At the late Qing Dynasty, the restaurant started to make Suzhou food. It employed some top chefs, paying special attention to the materials and ingredients, as well as the cutting technique and heat control. It strives to display the features in stewing, simmering, braising and warming, making the dishes excellent in color, smell, taste and form. Among the dishes in the Songhelou Restaurant, the Squirrel-shaped Mandarin Fish, Original tasted Fin and Steamed Pork Wrapped in Lotus Leaf are most renowned in the world. Their cute shape, bright color, tender flesh and fragrance will greatly arouse everyone's appetite.
